Almond Rocha Candy
“The first time I ate this candy I knew I would want it to be a Christmas tradition. I was in high school, when Dar, my sister-in-law, brought it over to my parents house on Christmas. Originally it had chopped almonds in the candy as well but I modified it because I don’t like it as well with the almonds in it.” – Mama J
Almond Rocha Candy
- 1 cup butter
- 1 1/3 cup sugar
- 1 tbsp light corn syrup
- 3 tbsp water
- chocolate flavored almond bark
- sliced almonds
Melt butter in large saucepan, add sugar, corn syrup, and water.
Cook over medium heat, stirring now and then, to hard crack stage, (300 degrees).
Watch carefully after temp. reaches 280.
Pour out on well greased jelly roll pan (about 11×15), and spread.
Cool thoroughly, and spread melted chocolate over the top.
Quickly sprinkle with almonds before chocolate hardens.
Break into pieces and enjoy!
