Cheesy Chicken and Rice

“This is a recipe Mama J has been making for years. Adapted from a Campbells Soup recipe. I have made this in the dutch on llama trips as well. Wonderful taste and easy to make.” – Papa J

Cheesy Chicken and Rice

  • 2 cans cream of chicken soup
  • 1 3/4 cups water
  • 2 cups brown rice
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 4 skinless boneless chicken breast
  • 1 1/2 cups shredded cheddar cheese
  • 1 pkg frozen vegetables (cauliflower, broccoli, carrot blend)
  1. Mix soup, water, rice, onion powder, pepper in baking dish.

    Stir in vegetable mix.

    Top with chicken strips.

    Cover and bake at 375 for 45 minutes or until chicken is no longer pink and rice is done.

    Top with cheese.
