Mincemeat Cookies
“Another Christmas favorite in my family. I would help mom make them. The dough is soft and tastes really good. A lot of people curl up their noses at mincemeat, but you just have to think of them as filled cookies. They do not taste at all like meat. Mincemeat is mostly apples, green tomatoes, raisins and lots of spices with a little beef fat. I make my own when I can get green tomatoes from someone, but you can also buy it. – Mama J
Mincemeat Cookies
- 1/2 cup soft margarine
- 1 cup brown sugar
- 1 egg
- 1 tbsp sour cream
- 1/2 tsp vanilla
- 1 tsp baking soda
- 1/2 tsp cream of tartar
- 1 3/4 cups flour
- pinch of salt
- mincemeat
Cream together first 5 ingredients. Gradually add remaining dry ingredients. Chill dough one hour.
Roll out dough to about 1/4 inch thick or less and cut into shapes. You will need to cutouts for each filled cookie. Place one cutout on greased cookie sheet. Put spoonful of mincemeat on cutout and top with second cutout. Press down edges of cookie. Bake 10 -12 minutes in 350 oven.
