Peach Huckleberry Cobbler

Peach Huckleberry Cobbler

  • 2 (16 ounce) cans sliced peaches in heavy or light syrup
  • 1 pint fresh huckleberries
  • 1/2 cup Bisquick baking mix
  • 1/3 cup sugar
  • ground cinnamon

Topping

  • 2 1/4 cups Bisquick baking mix
  • 1/4 cup sugar
  • 1/4 cup (1/2 stick) butter, melted
  • 1/2 cup milk
  • cinnamon sugar (1/4 cup sugar combined with 2 tsps ground cinnamon) stored in shaker.
  1. Drain 1 can of the peaches.

  2. Combine in the dutch oven both cans of peaches, including the juice from the undrained can, huckleberries, Bisquick, sugar, and a sprinkling of cinnamon.

  3. To make the topping: Combine the Bisquick, sugar, butter and milk in a ziplock bag. Drop bits of dough, using your fingers, on top of the peaches.

  4. Sprinkle with the cinnamon sugar.

  5. Recipe works for 10" dutch. Increase amounts by half for 12".

  6. Bake for about 45 minutes or until the top is golden brown and crusty.
