Peach Crumb Flan
Peach Crumb Flan
Crust
- 6 tbsp unsalted butter
- 1 cup whole wheat flour
- 1/4 cup honey
Filling
- 8 oz neufchatel or light cream cheese (Neufchatel or light cream cheese)
- 2 tbsp honey
- 1 egg
- 1/2 tsp vanilla
Topping
- 4 cups drained peaches
- 4 tbsp honey
- 1/2 tsp cinnamon
- 1/4 cup sliced almonds
Crust
Cut butter into the flour.
Add honey, mix.
Pat mixture into bottom of dutch oven extending crust 1 1/2 inches up the sides.
Bake crust for 8-10 minutes.
Filling
Mix Neufchatel or cream cheese & 2 Tbs of honey until smooth.
Add egg and vanilla, blend well.
Pour filling into crust.
Topping
In a separate bowl toss peaches with remaining 4 Tbs of honey and cinnamon until evenly coated.
Spoon peaches onto cream cheese mixture.
Sprinkle almonds on top.
Bake in a dutch for 25-35 minutes or until almonds are lightly toasted.
