Sourdough Pancakes

“This is a recipe that has been used for breakfast at the Johnson home for a long time. The original sourdough starter was given to me by a friend, Becky Daman. Becky is the wife of Glenn, who is a good friend from our Bible College days.” – Mama J

Sourdough Pancakes

  • 2 cups sourdough starter
  • 2 eggs
  • 2 tbsp sugar
  • 4 tbsp oil
  • 1 tsp soda dissolved in about a tablespoon of cold water
  1. Mix the first 4 ingredients together with a wooden or plastic spoon.

  2. Add soda mixture and stir well.

  3. Pour out batter onto a griddle to make pancakes.

  4. Add huckleberries if desired.

  5. Makes about 12 pancakes. Recipe may be cut in half for fewer pancakes.

  6. Sourdough Hints:

    Never use a metal container, spoon etc. or it will kill your sourdough.

    Always feed sourdough equal amounts of flour and sourdough, and a little less water. For example: 1 cup starter, 1 cup flour, 3/4 cup water. If its still to thick then you can add a tiny bit more water until the right consistency.

    Keep sourdough in the refrigerator if you are not going to use it. Take it out weekly and feed it, and then you can put it back in.

    In order to keep sourdough active it must be added to daily if left on the counter.

    For a healthy starter watch to see if your starter doubles in size and stays there for at least 4 hours. At that point it's the perfect time to bake bread!
