Tamale Pie
Tamale Pie
- 1 medium onion, chopped
- 1 garlic clove, minced
- 2 tbsp vegetable oil
- 1 lb lean ground beef
- 8 oz pork sausage
- 1 28 oz can tomatoes
- 1 16 oz can of corn, drained
- 1 tbsp chili powder
- 1/2 tsp cumin
- 1/2 tsp oregano
- 1 cup pitted sliced olives, drained
- 1 7 3/4 oz can tomato sauce
- 2 15 oz cans Nalley Tamales, corn husks removed cut into 1-2" pieces
- 4 oz grated cheddar cheese
Saute onion & garlic in vegetable oil until golden, not brown.
Add beef & sausage, saute until meat is brown.
Drain off excess fat.
Stir in tomatoes, corn, chili powder, cumin and oregano.
Cover & simmer 10 minutes.
Add olives, tomato sauce, tamales.
Sprinkle with cheddar cheese (or wait until nearly done).
Bake in dutch for 45 minutes, until cheese is melted and meat mixture is bubbly.
