Butter Riches Cookies
“These are a Christmas tradition. I have fond memories of making them with my mom every Christmas. Since they only use egg yolks we would carefully break the eggs so we could use the whites for divinity.” – Mama J
Butter Riches Cookies
- 3/4 cup butter
- 1/2 cup brown sugar
- 2 egg yolks
- 1 tsp vanilla
- 1 3/4 cup flour
Frosting
- 1/4 cup butter
- 2 1/2 cups powdered sugar
- 1 tsp vanilla
- 3-4 tbsp cream or milk
- red hots
Heat oven to 350.
Shape into balls and place on greased cookie sheet.
Flatten with glass dipped into granulated sugar.
Bake 10 to 12 minutes until golden brown. Cool.
Frosting
Brown the butter, blend in the powdered sugar and vanilla.
Carefully add cream or milk until you have the desired consistency.
It should be a little runny as it will harden when cooled.
Frost cookies and top with red hots.
