Grandpa Nelmer Hagens Potato Salad
“This is another recipe that I learned came from my Grandpa Hagen. I grew up watching my mom make it. We never really measured any of the ingredients, just mixed it up to taste.” – Mama J
Grandpa Nelmer Hagens Potato Salad
- 8-10 potatoes
- 4-6 eggs
- 4-6 green onions
- dill pickles to taste
- 1/2-3/4 cup salad dressing
- 2-3 tbsp mustard
- 3-4 tbsp pickle juice
- salt (to taste)
- pepper (to taste)
- onion powder (to taste)
Cook enough potatoes to fill a 3 quart pan. Add salt to the water and boil potatoes just until tender, being careful not to overcook. Cool.
Hard boil the eggs. Cool.
Chop potatoes, eggs, green onions, pickles
Combine in large bowl.
In small bowl combine salad dressing, mustard, pickle juice, salt, and pepper to taste.
Pour dressing over potato mixture being careful not to add too much. Mix well. Salad is best if it sits an hour or 2 before serving.
