Oatmeal Cake
“This was one of my mom’s favorite cakes so I would make it for her birthday. I haven’t made it in years but consider it a family recipe and wanted to pass it on.” – Mama J
Oatmeal Cake
- 1 cup melted margarine
- 1 cup boiling water
- 1 cup oatmeal
- 1 cup brown sugar
- 1 cup white sugar
- 2 eggs
- 1 1/2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
Topping
- 3/4 cup margarine, melted
- 3/4 cup sugar
- 1/4 cup karo syrup
- 1/4 cup canned milk
- 1 cup nuts
- 1 cup coconut
Heat oven to 350.
Combine first 3 ingredients in large bowl and set aside for 20 minutes.
Add sugars and eggs and beat 2 minutes.
Gradually add remaining dry ingredients, and mix well.
Pour into greased 9×13 pan and bake 40 minutes.
Remove from oven and cool.
After cake is cooled combine topping ingredients, mix well and spread over cake.
Broil on top of cake until brown.
