Oatmeal Cake

“This was one of my mom’s favorite cakes so I would make it for her birthday. I haven’t made it in years but consider it a family recipe and wanted to pass it on.” – Mama J

Oatmeal Cake

  • 1 cup melted margarine
  • 1 cup boiling water
  • 1 cup oatmeal
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp nutmeg

Topping

  • 3/4 cup margarine, melted
  • 3/4 cup sugar
  • 1/4 cup karo syrup
  • 1/4 cup canned milk
  • 1 cup nuts
  • 1 cup coconut
  1. Heat oven to 350.

  2. Combine first 3 ingredients in large bowl and set aside for 20 minutes.

  3. Add sugars and eggs and beat 2 minutes.

  4. Gradually add remaining dry ingredients, and mix well.

  5. Pour into greased 9×13 pan and bake 40 minutes.

  6. Remove from oven and cool.

  7. After cake is cooled combine topping ingredients, mix well and spread over cake.

  8. Broil on top of cake until brown.
