Peach Crumb Flan

Crust

  • 6 tbsp unsalted butter
  • 1 cup whole wheat flour
  • 1/4 cup honey

Filling

  • 8 oz neufchatel or light cream cheese (Neufchatel or light cream cheese)
  • 2 tbsp honey
  • 1 egg
  • 1/2 tsp vanilla

Topping

  • 4 cups drained peaches
  • 4 tbsp honey
  • 1/2 tsp cinnamon
  • 1/4 cup sliced almonds

Crust

  1. Cut butter into the flour.

  2. Add honey, mix.

  3. Pat mixture into bottom of dutch oven extending crust 1 1/2 inches up the sides.

  4. Bake crust for 8-10 minutes.

Filling

  1. Mix Neufchatel or cream cheese & 2 Tbs of honey until smooth.

  2. Add egg and vanilla, blend well.

  3. Pour filling into crust.

Topping

  1. In a separate bowl toss peaches with remaining 4 Tbs of honey and cinnamon until evenly coated.

  2. Spoon peaches onto cream cheese mixture.

  3. Sprinkle almonds on top.

  4. Bake in a dutch for 25-35 minutes or until almonds are lightly toasted.
