Sprouted Spelt Sandwich Bread

Sprouted Spelt Sandwich Bread
- 2 cups plus 2 tbsp warm water
- 2 tbsp butter, softened
- 1 tbsp honey
- 2 tsp salt
- 4 cups sprouted spelt flour
- 2/3 cup unbleached white flour
- 1/4 cup vital wheat gluten
- 1 tbsp yeast
Put water, butter, honey, and salt into a 2 lb. loaf capacity bread machine.
Add flour, and vital wheat gluten on top of the other ingredients. Make sure to measure these carefully; leveling them off with the back of a knife.
Make a well, and add the yeast.
Turn machine on and select the dough cycle. Keep an eye on the dough as it begins kneading. Scrape the sides down, and add a tiny bit of water if it's looking to dry. The dough will be slightly sticky, and will form a ball that will clean the sides of the pan.
Grease two breads pans liberally with butter. Preheat oven to 350.
When the dough cycle is complete, punch down the dough, and shape into two even loaves. Place them into the well greased bread pans, and turn them over so that you can get a light coating of butter on the tops.
Place the loaves in a warm area to raise for 30-45 mins. You want them to double in size.
When the oven is preheated, place the bread in the oven, and bake for 27-30 mins. If you would like bake them on a cookie sheet to help the bottom from getting overdone.
When done baking immediately take the bread out of the pans and onto a cooling rack.
