Zucchini Relish

“Original recipe was given to me by Grandma (Lorene) Johnson. Dad would ask me to make it because he enjoyed it on his hamburger.” – Mama J

Zucchini Relish

  • 10 cups ground zucchini
  • 4 cups ground onion
  • 5 tbsp salt
  • 2 1/2 cups vinegar
  • 5 cups sugar
  • 1 1/2 tsp nutmeg
  • 1 tsp mustard
  • 2 tsp celery seed
  • 1/2 tsp pepper
  • 1 ground green pepper
  • 1 ground red pepper
  • 2 tsp cornstarch dissolved in small amount of water
  1. Add ground zucchini, ground onion, and salt. Mix well and let stand overnight.

  2. Drain and rinse well in cold water.

  3. Put in large pan, and add the vinegar, sugar, nutmeg, mustard, celery seed, pepper, and red/green peppers. Bring to a boil.

  4. Add cornstarch

  5. Simmer for 30 mins.

  6. Pack relish into jars. Process in water bath 10 to 15 mins. Check canning book for exact time.
